- 1 cup powdered sugar
- 1 tbsp whole milk
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).
- Beat in the egg and vanilla extract until smooth.
- In another bowl, whisk together flour, baking powder, cinnamon, and a pinch of salt; gradually add to the wet mixture until just combined.
- In a separate bowl, mix cream cheese with powdered sugar and milk until smooth for the filling.
- Scoop dough onto prepared baking sheets, make an indentation in each cookie’s center, and fill with the cream cheese mixture.
- Bake for about 12-15 minutes until edges are golden but centers remain soft; let cool before transferring to wire racks.
Notes
- For added richness, substitute mascarpone for cream cheese in the filling.
- Use room temperature ingredients for better mixing.
