- 1 lb boneless, skinless chicken breasts
- 1/2 cup fresh cilantro, chopped
- 1/4 cup freshly squeezed lime juice
- 3 garlic cloves, minced
- 1 tsp cumin powder
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a bowl, mix lime juice, minced garlic, chopped cilantro, cumin powder, olive oil, salt, and pepper.
- Place chicken in a resealable bag or shallow dish and pour marinade over it. Marinate in the fridge for at least 30 minutes or overnight for best flavor.
- Preheat your grill or skillet over medium-high heat.
- Cook chicken for 6-7 minutes per side until fully cooked (internal temperature reaches 165°F/75°C) and grill marks appear.
- Let chicken rest for 5 minutes before slicing or serving whole.

- Serve with rice or salads for a complete meal.
- Add diced jalapeños for extra heat or substitute cilantro with parsley if preferred.
