- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 medium zucchinis (sliced)
- 1.5 cups shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with nonstick spray.
- Cut the chicken breasts into bite-sized pieces and season with salt, pepper, garlic powder, and Italian seasoning.
- In a skillet over medium heat, heat olive oil and sauté the sliced zucchini for about 3-5 minutes until slightly softened.
- In a large bowl, combine seasoned chicken pieces with sautéed zucchini. Stir in half of the shredded cheese.
- Transfer the mixture to the prepared baking dish, top with remaining cheese, cover with foil, and bake for 25-30 minutes.
- Remove foil in the last 5-10 minutes for a golden cheese crust. Let cool slightly before serving.
Notes
- Feel free to substitute zucchini with other vegetables such as bell peppers or mushrooms for variety.
- Enhance the flavor by adding crushed red pepper flakes for a spicy kick.
