  • 2 medium zucchinis (sliced)
  • 1.5 cups shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with nonstick spray.
  2. Cut the chicken breasts into bite-sized pieces and season with salt, pepper, garlic powder, and Italian seasoning.
  3. In a skillet over medium heat, heat olive oil and sauté the sliced zucchini for about 3-5 minutes until slightly softened.
  4. In a large bowl, combine seasoned chicken pieces with sautéed zucchini. Stir in half of the shredded cheese.
  5. Transfer the mixture to the prepared baking dish, top with remaining cheese, cover with foil, and bake for 25-30 minutes.
  6. Remove foil in the last 5-10 minutes for a golden cheese crust. Let cool slightly before serving.
