- 3 boneless, skinless chicken breasts, cooked and diced
- 8 oz cream cheese, softened
- 1 sheet puff pastry, thawed
- 2 cups fresh spinach, chopped
- 1 tsp garlic powder
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- 2 tsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté spinach until wilted (about 3 minutes).
- In a bowl, mix together the cooked chicken, cream cheese, sautéed spinach, garlic powder, shredded cheese, salt, and pepper until well combined.
- Roll out the puff pastry on a floured surface and cut into squares.
- Place a spoonful of filling in the center of each square. Fold the pastry over diagonally and seal the edges with a fork.
- Arrange the filled pillows on a parchment-lined baking sheet and bake for 20–25 minutes or until golden brown.
Notes
- For added flavor, incorporate herbs like thyme or oregano into the filling.
- Swap chicken for turkey or add bell peppers for extra nutrition.
