- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 medium green bell pepper, sliced
- 1 medium sweet onion, sliced
- 1 cup mozzarella cheese, shredded
- 4 hoagie rolls
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Slice chicken breasts into thin strips for even cooking.
- Heat olive oil in a large skillet over medium heat. Add bell pepper and onion; sauté for 5-7 minutes until softened.
- Add the chicken, season with salt and pepper, and cook until no longer pink, about 7-10 minutes.
- Sprinkle mozzarella cheese on top of the chicken mixture. Cover with a lid and let it melt for 3-5 minutes.
- Toast hoagie rolls if desired. Spoon the cheesy chicken mixture into each roll and serve hot.
Notes
- For added flavor, consider using provolone or pepper jack cheese.
- Feel free to add sautéed mushrooms or spinach for extra nutrition.
