- 4 boneless, skinless chicken breasts
- 1 cup seasoned breadcrumbs
- 1 cup marinara sauce
- 8 oz fresh mozzarella cheese, sliced
- 1/4 cup fresh basil leaves
- 3 tbsp olive oil
- Salt and pepper to taste
- 4 sub rolls or ciabatta bread
Instructions
- Preheat oven to 375°F (190°C).
- Set up three shallow bowls: one with seasoned flour, one with beaten eggs, and one with breadcrumbs.
- Dredge each chicken breast in flour, dip in egg wash, then coat with breadcrumbs.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 4-5 minutes on each side until golden brown.
- Place seared chicken on a baking sheet. Top with marinara sauce and mozzarella slices. Bake for 15 minutes or until cheese is bubbly.
- Slice rolls open and toast lightly if desired. Assemble sandwiches by placing the cheesy chicken inside each roll and garnishing with fresh basil.
Notes
- For added flavor, consider using provolone cheese or roasted red peppers.
- Let the chicken rest for a few minutes before slicing to retain juiciness.
- Store leftovers in an airtight container for up to three days; reheat at 350°F for best results.
