Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 package (6 oz) stuffing mix
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 cups mixed vegetables (frozen or fresh)
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Lightly spray a large baking dish with nonstick cooking spray.
- Season chicken breasts with salt, pepper, onion powder, and garlic powder. Place in the prepared baking dish and bake for 20 minutes.
- In a mixing bowl, combine cream of chicken soup and chicken broth until smooth. Stir in mixed vegetables and paprika.
- Add stuffing mix to the vegetable mixture; adjust moisture with more broth if needed.
- Pour the filling over the baked chicken, ensuring even coverage. Bake for an additional 25-30 minutes until golden brown on top.
Notes
- Use day-old bread for the stuffing mix to avoid sogginess.
- Feel free to substitute turkey for chicken or use vegetable broth for a vegetarian option.
