- 1 lb boneless chicken thighs
- 12 oz smoked sausage
- 1 cup diced bell peppers (mixed colors)
- 1 cup thinly sliced onions
- 4 cloves minced garlic
- 4 cups low-sodium chicken broth
- 2 tbsp Cajun seasoning
- 1 cup sliced okra (optional)
- 2 green onions (for garnish)
- 2 cups cooked white rice (for serving)
Instructions
- Heat a large pot over medium heat and add sliced smoked sausage. Cook until browned.
- Stir in onions, bell peppers, and garlic; cook for about 5 minutes until softened.
- Nestle in boneless chicken thighs and season with Cajun seasoning. Brown slightly on both sides.
- Pour in chicken broth, scraping up any bits from the bottom of the pot. Bring to a gentle simmer.
- If using okra, add it now. Cover partially and let simmer for 30–40 minutes, stirring occasionally.
- Serve hot over cooked white rice, garnished with chopped green onions.
Notes
- For a lighter version, substitute turkey sausage or omit it entirely.
- Consider using homemade stock for added depth of flavor.
- Adjust the Cajun seasoning according to your spice preference.
