Instructions

- In a large bowl, beat softened butter with granulated and brown sugars until light and fluffy.
- Add the egg and mint extract; mix until smooth.
- Gradually add the dry ingredients to the wet mixture until just combined. Be careful not to overmix.
- Gently fold in the chocolate chips.
- Scoop heaping tablespoons of dough onto prepared baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes until edges are set but centers remain soft. Let cool slightly before transferring to wire racks.
