Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the cocoa powder, flour, baking powder, and salt until well combined.
- In a large mixing bowl, beat the softened butter with granulated and brown sugars until light and fluffy.
- Add the eggs one at a time along with vanilla extract; mix until smooth.
- Gradually incorporate the dry ingredients into the wet mixture without overmixing.
- Gently fold in the chocolate chips.
- Scoop rounded balls of dough onto the prepared baking sheets, spacing them two inches apart.
- Bake for 10-12 minutes until edges are set but centers remain soft; let cool completely on wire racks.
- Spread frosting between two cooled brownie cookies to create sandwiches.
Notes
- For an extra gooey texture, slightly underbake the cookies.
- Customize by adding nuts or using white chocolate chips instead of semi-sweet.
