- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream
- ½ cup granulated sugar
- ¼ cup lemon juice (freshly squeezed)
- ¼ cup lime juice (freshly squeezed)
- 21 oz cherry pie filling (1 can)
- ½ cup pistachios, chopped
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 325°F (160°C). Line a springform pan with parchment paper.
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the prepared pan.
- Bake the crust for about 10 minutes until golden brown. Remove from the oven and let cool.
- In another bowl, beat cream cheese and sugar until smooth. Add sour cream, vanilla extract, lemon juice, and lime juice; mix until combined.
- Fold in half of the cherry pie filling while reserving some for topping.
- Pour the filling over the cooled crust and bake for 50-60 minutes until set around edges but slightly jiggly in the center. Let cool completely before refrigerating overnight.
- Before serving, top with remaining cherry pie filling and sprinkle with chopped pistachios.
