- 24 ladyfingers
- 1 cup mascarpone cheese
- 1 ½ cups fresh cherries, halved and pitted
- ½ cup amaretto liqueur, divided
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- 2 tbsp cocoa powder (for dusting)
Instructions
- Prepare the cherry mixture: In a bowl, combine halved cherries with sugar and half of the amaretto. Set aside.
- Make the mascarpone filling: Whip mascarpone cheese with sugar and vanilla extract until smooth and creamy.
- Dip ladyfingers: Quickly dip ladyfingers into the remaining amaretto one at a time until softened but not soggy.
- Layer the dessert: Place dipped ladyfingers in a serving dish, spread half of the mascarpone filling over them, followed by half of the cherry mixture. Repeat with another layer of dipped ladyfingers, remaining mascarpone filling, and cherries.
- Chill: Cover and refrigerate for at least 4 hours before serving to allow flavors to meld.

- For a twist, substitute cherries with strawberries or raspberries.
- Ensure mascarpone is at room temperature for easier blending.
