- 8 oz penne pasta
- 1 packet (1 oz) taco seasoning
- 1 can (14.5 oz) diced tomatoes with juice
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup bell peppers, chopped (any color)
- 1 cup shredded cheddar cheese
- ½ cup sour cream (for serving)
- 2 green onions, chopped (for garnish)
Instructions
- Boil salted water in a large pot over medium-high heat. Add penne pasta and cook until al dente according to package instructions (about 8-10 minutes). Drain and set aside.
- In a separate skillet over medium heat, sauté chopped bell peppers for about 5 minutes until softened.
- Stir in diced tomatoes with their juice and black beans into the skillet. Add taco seasoning and simmer for 5 minutes.
- Combine the cooked pasta with the skillet mixture. Sprinkle shredded cheese on top and stir until melted.
- Serve hot in bowls topped with a dollop of sour cream and garnished with chopped green onions.
