Instructions
- 1. Marinate the Chicken: In a bowl, mix olive oil, lime juice, salt, and pepper. Add chicken breasts and let marinate for at least 30 minutes.
- 2. Prepare the Salsa: While the chicken marinates, combine diced mangoes, red onion, cilantro, and jalapeño in a bowl. Toss with additional lime juice.
- 3. Preheat the Grill: Heat your grill to medium-high (375°F).
- 4. Grill the Chicken: Place marinated chicken on the grill and cook for about 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
- 5. Top with Salsa: Remove chicken from the grill and generously top each piece with fresh mango salsa before serving.
Notes
- For added flavor, marinate the chicken overnight.
- Substitute mango with pineapple for a different tropical flair.
