- 1 lb ground turkey (or beef)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup bell peppers, chopped (red or yellow)
- 1 medium onion, chopped
- 2 tbsp taco seasoning
- 6 flour tortillas (or corn for gluten-free)
- 2 cups shredded cheddar cheese
- 1 cup sour cream (for topping)
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a skillet over medium heat, sauté onions and bell peppers until soft. Add ground turkey and cook until browned.
- Stir in black beans and taco seasoning; mix well and heat for about 3 minutes.
- Layer half the tortillas in the baking dish, followed by half of the meat mixture and half of the cheese. Repeat layering.
- Cover with foil and bake for 20 minutes; then remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
- Allow to cool slightly before serving. Garnish with fresh cilantro and top with sour cream.
Notes
- Customize by using leftover chicken or adding extra veggies like zucchini or corn.
- For added flavor, consider making your own taco seasoning.
