  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup bell peppers, chopped (red or yellow)
  • 1 medium onion, chopped
  • 2 tbsp taco seasoning
  • 6 flour tortillas (or corn for gluten-free)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream (for topping)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, sauté onions and bell peppers until soft. Add ground turkey and cook until browned.
  3. Stir in black beans and taco seasoning; mix well and heat for about 3 minutes.
  4. Layer half the tortillas in the baking dish, followed by half of the meat mixture and half of the cheese. Repeat layering.
  5. Cover with foil and bake for 20 minutes; then remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
  6. Allow to cool slightly before serving. Garnish with fresh cilantro and top with sour cream.
