- 1 cup bell peppers (diced, any color)
- 2 cups fresh spinach (washed)
- 1 medium onion (chopped)
- 1 cup sharp cheddar cheese (shredded)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp extra virgin olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In an oven-safe skillet, heat olive oil over medium heat. Sauté onions and bell peppers for about 5 minutes until soft.
- Add fresh spinach, salt, and pepper; cook until wilted, approximately 2 minutes.
- In a bowl, whisk eggs until frothy and pour over the sautéed vegetables.
- Sprinkle shredded cheese on top of the egg mixture.
- Bake in the preheated oven for 20-25 minutes until set and lightly golden.
