- 2 medium sweet potatoes, sliced into 1/2-inch rounds
- 1 ripe avocado, mashed
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil or cilantro, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the sweet potato slices on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt.
- Roast in the oven for 25-30 minutes until tender and slightly caramelized.
- While the sweet potatoes roast, prepare the toppings: mash the avocado, halve the cherry tomatoes, and chop the herbs.
- Once roasted, spread mashed avocado on each sweet potato slice and top with cherry tomatoes and herbs.
- Drizzle with a bit more olive oil, season with salt and pepper, and serve immediately.
Notes
- For added flavor, try sprinkling red pepper flakes or nutritional yeast on top.
- You can swap out the toppings based on what you have at home—hummus or nut butter are great alternatives.
