Instructions

  3. Roast in the oven for 25-30 minutes until tender and slightly caramelized.
  4. While the sweet potatoes roast, prepare the toppings: mash the avocado, halve the cherry tomatoes, and chop the herbs.
  5. Once roasted, spread mashed avocado on each sweet potato slice and top with cherry tomatoes and herbs.
