- 1 cup whole wheat flour
 - 2 cups bran flakes
 - 2 tsp baking powder
 - 1 tsp baking soda
 - 1/2 cup brown sugar
 - 1 cup milk (or plant-based alternative)
 - 2 large eggs
 - 1/4 cup vegetable oil (or applesauce)
 - 1/4 cup honey or maple syrup
 - 1/2 cup dried fruit (optional)
 
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
 - In a large bowl, whisk together the whole wheat flour, bran flakes, baking powder, baking soda, and brown sugar until combined.
 - In another bowl, mix the milk, eggs, vegetable oil, and honey until well blended.
 - Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
 - If desired, fold in the dried fruit.
 - Spoon the batter into the lined muffin tins, filling each about two-thirds full.
 - Bake for 15-20 minutes or until golden brown and a toothpick inserted into the center comes out clean.
 - Allow muffins to cool slightly before enjoying.

- For added flavor, consider mixing in nuts or chocolate chips.
 - To enhance nutrition without sacrificing taste, swap regular flour for almond flour or use yogurt in place of some oil.
