- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter (melted)
- 16 oz cream cheese (softened)
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup sour cream
- 2 cups fresh berries (strawberries, blueberries, raspberries)
- 2 tbsp lemon juice
Instructions
- Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a bowl, combine crushed graham crackers with melted butter and press into the bottom of the prepared pan to form the crust.
- In another bowl, beat softened cream cheese until smooth. Gradually mix in sugar, then add vanilla extract and sour cream until creamy.
- Gently fold in half of the fresh berries into the cream cheese mixture.
- Pour the filling over the crust in the springform pan and bake for 50-60 minutes until slightly set but still jiggly in the center.
- Turn off the oven, crack open the door slightly, and let cool inside for one hour before refrigerating for at least four hours or overnight before serving.
