- 1 lb beef strips (flank steak or sirloin)
- 2 cups Jasmine or basmati rice
- 1 bell pepper, sliced
- 1 onion, sliced
- 3 garlic cloves, minced
- 3 tbsp low-sodium soy sauce
- 1 tsp grated ginger
- 2 green onions, chopped
- 1 tsp sesame oil
- Sriracha or chili sauce (optional)
Instructions
- In a bowl, whisk together soy sauce, garlic, ginger, and sesame oil to prepare the marinade.
- Add beef strips to the marinade and let sit for at least 30 minutes.
- Prepare rice according to package instructions; fluff when done.
- In a skillet over medium heat, sauté onions and bell peppers until soft (5-7 minutes).
- Increase heat to high and add marinated beef to the skillet. Stir-fry until browned and cooked through (5-6 minutes).
- Serve rice topped with beef and vegetables; garnish with green onions.
Notes
- Feel free to swap in different vegetables like snap peas or carrots for variety.
- For a vegetarian option, substitute beef with tofu or tempeh.
