- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 1 cup barbecue sauce
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme or rosemary
- 2 tbsp lemon juice
- 2 tbsp honey or brown sugar
Instructions
- Preheat the oven to 400°F (200°C). Wash and halve the baby potatoes.
- In a bowl, toss potatoes with olive oil, garlic powder, salt, pepper, and dried herbs until evenly coated.
- In another bowl, mix chicken breasts with barbecue sauce until well-coated.
- Spread seasoned potatoes on a baking sheet and roast for about 25 minutes until golden brown.
- Add barbecue chicken to the baking sheet and return it to the oven for an additional 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C).
- Brush additional barbecue sauce over the chicken for extra flavor in the last few minutes of baking.
- Let rest for five minutes before serving with your favorite sides.
Notes
- For enhanced flavor, marinate the chicken for at least one hour or overnight.
- Substitute chicken with tofu or vegetables for a vegetarian option.
