Barbecue Chicken and Potatoes is a flavorful dish featuring juicy chicken and crispy baby potatoes, all glazed in rich barbecue sauce, making it perfect for gatherings or cozy family dinners.

  • Total Time: 1 hour 10 minutes
  • Yield: Serves 4

Ingredients

Scale
  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup barbecue sauce
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme or rosemary
  • 2 tbsp lemon juice
  • 2 tbsp honey or brown sugar

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and halve the baby potatoes.
  2. In a bowl, toss potatoes with olive oil, garlic powder, salt, pepper, and dried herbs until evenly coated.
  3. In another bowl, mix chicken breasts with barbecue sauce until well-coated.
  4. Spread seasoned potatoes on a baking sheet and roast for about 25 minutes until golden brown.
  5. Add barbecue chicken to the baking sheet and return it to the oven for an additional 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C).
  6. Brush additional barbecue sauce over the chicken for extra flavor in the last few minutes of baking.
  7. Let rest for five minutes before serving with your favorite sides.

Notes

  • For enhanced flavor, marinate the chicken for at least one hour or overnight.
  • Substitute chicken with tofu or vegetables for a vegetarian option.
