Ingredients

  • 8 oz penne pasta
  • 1 block (8 oz) feta cheese
  • 2 cups cherry tomatoes, halved
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Drizzle olive oil in a baking dish and add halved cherry tomatoes and minced garlic.
  2. Place the block of feta cheese in the center. Drizzle with more olive oil and season with salt and pepper. Gently stir the tomatoes.
  3. Bake for about 30 minutes until cheese is golden and tomatoes burst.
  4. While baking, cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.
  5. Remove the dish from the oven and mix everything together using a fork. Gradually add reserved pasta water until creamy.
  6. Toss in fresh basil leaves before serving.

Notes

  • Substitute cherry tomatoes with zucchini or spinach for different flavors.
  •  For added spice, include crushed red pepper flakes.
