- 8 oz penne pasta
- 1 block (8 oz) feta cheese
- 2 cups cherry tomatoes, halved
- 3 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Instructions
- Preheat oven to 400°F (200°C). Drizzle olive oil in a baking dish and add halved cherry tomatoes and minced garlic.
- Place the block of feta cheese in the center. Drizzle with more olive oil and season with salt and pepper. Gently stir the tomatoes.
- Bake for about 30 minutes until cheese is golden and tomatoes burst.
- While baking, cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.
- Remove the dish from the oven and mix everything together using a fork. Gradually add reserved pasta water until creamy.
- Toss in fresh basil leaves before serving.
Notes
- Substitute cherry tomatoes with zucchini or spinach for different flavors.
- For added spice, include crushed red pepper flakes.
